Thursday night's dinner is sorted with this simple and delicious chicken that can be served tonight with veggies then repurposed tomorrow in a salad for lunch!🐝 Ingredients: 4 boneless, skinless free range chicken breast halves (about 1 pound) Juice of 1 lime (about 2 tablespoons) 1 to 2 tablespoons fresh coriander, chopped 1 tablespoon of Capilano Honey Method: With a meat tenderiser, pound each breast half to about 1/2-inch thick. Combine lime juice, coriander, and honey in a small bowl. Brush chicken breasts with glaze. Brush grill lightly with olive oil. Grill (or broil) chicken approximately 5 minutes on each side until cooked. Serve hot right away or refrigerate for use in sandwiches or salads later. Serves 4. Each serving contains about 149 calories, 27 g protein, 1.5 g fat (9 percent calories from fat), 69 mg cholesterol, 5 g carbohydrates, less than 1 g fiber, and 79 mg sodium. Our newest Bee Scholar, Cooper Schouten from Southern Cross University, is back in Papua New Guinea to continue working on supporting profitable, productive and sustainable beekeeping indigenous communities.✨ His research is not only helping to reduce poverty among rural beekeepers, but his findings have numerous directly transferable benefits for informing best practice pest management and biosecurity for Australia.🛡 This year Cooper will also be working with the CSIRO to research mites in PNG, which will present transferable findings for honey bee biosecurity in Australia.🇦🇺 We are proud to be supporting Cooper’s research as well as funding his Certificate III in Beekeeping, which he'll graduate from in May!🎓 Stay tuned to learn more about the bee-rilliant projects Cooper will be working on this year.🐝

Looking for healthy morning tea inspo? 🐝 Why not try our Banana-Passion Pots, crafted by Capilano Dietitian Kate Save. They provide a source of calcium, vitamin C and dietary fibre, plus are high in protein and contain essential fatty acids from walnuts and chia seeds.👌 Ingredients: 500g Greek yoghurt 2 bananas, large 1 Tsp vanilla extract 2 passionfruit, large, (or 4Tb tinned passionfruit pulp) 1/3 cup chopped walnuts 1Tb chia seeds 1/3 cup toasted muesli (can be substituted with Gluten Free Muesli if desired) 1tsp cinnamon 1TB Capilano Honey Method: 1. In a medium bowl, mix chia seeds and vanilla extract with yoghurt together. 2. In a small bowl, place chopped banana and stir through the passionfruit. 3. In another small bowl, mix honey, cinnamon and toasted muesli together. 4. Evenly divide the banana/passionfruit into 4 glasses, then layer with yoghurt mixture and finally top with the walnut and honey crumble.
