Banana Bread


1/2 cup Capilano honey, plus extra to drizzle
50g margarine or butter, plus extra for spreading
1 cup self raising flour
1 cup wholemeal self raising flour
1/2 teaspoon bicarbonate of soda
2 teaspoons mixed spice
1/2 cup firmly packed brown sugar
2 eggs, lightly beaten
1/3 cup low fat milk
1 cup mashed very ripe banana (2 large bananas)

    Preheat oven to 170°C. Grease and line a 9cm x 21cm (base measurement) loaf pan with non-stick baking paper.

    Place Capilano honey and margarine in a small saucepan over a moderate heat. Stir until margarine melts. Set aside to cool to lukewarm.

    Meanwhile, sift flours, bicarbonate of soda and mixed spice into a large bowl. Return husks to bowl. Add brown sugar and stir to combine. Make a well in the centre. Add honey mixture, eggs, milk and mashed banana. Stir until combined. Pour into prepared pan.

    Bake 45 minutes or until a skewer inserted in the centre of the loaf removes clean. Allow to cool in the pan for 10 minutes, then remove from pan onto a wire rack to cool. Serve sliced or toasted and spread with margarine a drizzle of delicious Capilano honey!
