1 cup rolled oats (not instant)
6 large granny smith apples (about 1.3kg)
¼ cup sultanas
¼ cup lemon juice
2 teaspoons finely grated lemon rind
½ cup plain flour
¼ cup firmly packed brown sugar
1 teaspoon mixed spice
2/3 cup chopped walnuts
cream or ice-cream, to serve
Preheat oven to 150 degrees Celsius. Line an oven tray with non-stick baking paper. Grease an 8 cup capacity shallow baking dish.
Place the 2 tablespoons honey and 30g of the butter in a small saucepan. Stir over a moderate heat until butter melts. Remove from heat and stir in oats. Spread mixture onto prepared oven tray and bake 10 minutes or until lightly golden, stirring halfway through cooking time. Set aside. Increase oven temperature to 170 degrees Celsius.
Peel, core and thickly slice apples. Place in a saucepan along with sultanas, remaining honey, lemon juice and rind. Stir to combine. Cook over a moderately - low heat, stirring occasionally, until apple is just tender. Transfer to prepared dish.
Place flour, sugar and spice into a bowl and mix to combine. Chop remaining butter and rub into flour mixture until it resembles coarse breadcrumbs.
Break up oat mixture with your fingers and add to flour mixture along with walnuts. Stir to combine, then sprinkle crumble evenly over apple.
Bake 30 minutes or until golden brown. Allow to stand 10 minutes before serving with cream or ice-cream.
