Date & Fig Truffles
Makes: 36 balls
1 cup dried figs, stalks removed, chopped
1 tablespoon finely grated orange rind
1 cup blanched almonds, toasted
2 tablespoon Capilano Honey
½ teaspoon mixed spice
1/3 cup desiccated coconut
Combine all ingredients (except for coconut) in a large bowl. Using a food processor, process mixture in batches until a paste forms.
With damp hands, roll tablespoonfuls of mixture into balls.
Roll balls in coconut. Store in an airtight container in the refrigerator.
