½ cup Capilano honey
2 tbsp. water
4 mint leaves
3x 2cm x 2cm pieces of honeydew
1 cup soda water
Add honeydew, mint and lime to a highball glass. Use a muddler to crush the mint, lime and honeydew.
Add 1 tbsp. honey (Optional: warm honey to help it mix in better).
Add soda water and ice to serve.
