Honey Nut Carrots

This delicious classic side, recommended by Capilano Dietitian Kate Save, is always a hit with the little ones. Serves 4.


500g fresh baby carrots
1/4 cup of water
1 tablespoons of Capilano Honey
2 tablespoons of butter
1/4 cup of pecan nuts (or your preferred nut)
1 tablespoon of chopped thyme (or your preferred herb)

    Peel carrots and, if necessary, cut into equal sizes. Place carrots in microwave safe casserole dish with the water. Cover and cook in microwave on high for 6 minutes.

    Drain carrots. Toss Capilano Honey and butter through carrots. Sprinkle with nuts and thyme. Cover and cook on high for 1 minute.
