Manuka Honey, Chocolate & Banana Bread

Fluffy, golden banana bread with yummy chocolate chunks & our Active Manuka Honey thanks to @noashealthyeats is the perfect afternoon snack or mid-morning treat to indulge in.

Ingredients

3 medium ripe bananas or 290-300g
1/2 cup of sugar of choice/or Natvia
3 tbs of Capilano Honey Active Manuka Honey MGO300+
3 tbs oil (vegetable/coconut)
2-4 tbs Coconut milk
1.5 cups self raising flour or 200-220g
1tsp vanilla extract
1/2 tbs apple cider vinegar - optional
1/2 block of chopped chocolate

Instructions

    Preheat the oven to 170°C.

    In a large bowl mash your bananas, than add in your sugar, honey, oil, vanilla extract, 2 tbs milk and stir.

    Once combined add in apple cider vinegar & whisk again. Let sit for a few minutes and then sift in flour & a pinch of salt. combine with a spatula.

    If the mix is too thick add another few tbs of coconut milk. If the mix is too wet, add in a little more flour. Chop chocolate up and fold through the batter.

    Pour batter into a lined loaf tin, and bake for 45 minutes -1 hour or until a tooth pick comes out with just a few crumbs.

    For best results, let the bread completely cool on the bench top before cutting the loaf so that it can keep cooking a little inside.
