Manuka Honey, Walnut & Almond Granola

The fragrant aroma of nourishing oats, walnuts & almonds toasting in our Active Manuka Honey in this granola recipe will be hard to resist. Thanks to @noashealthyeats for this heavenly recipe!

1 ½ cups rolled oats 150g
¼ cup almond meal
1/3 cup cashews
1/3 cup walnuts
1/3 cup @capilanohoney Active Manuka MGO 30
¼ cup cashew butter (optional to add an extra tbs)
2 tbsp coconut oil
2tsp vanilla extract
cinnamon & salt to taste

    Preheat oven to 160•c and line a pan with baking paper.

    In a medium mixing bowl, add your oats, almond meal and chopped nuts, stir them together. scoop out 1/2 cup of the mix and blitz it than return it to the bowl.

    In a small microwave safe bowl, microwave your coconut oil until liquefied, then add in your honey and microwave again till hot and a little bubbly (in small increments, of about 20 seconds each). Finally, add cashew butter, vanilla and cinnamon and stir till smooth.

    Pour your wet ingredients over your oats & nut mix, using a spatula ensure the entire mix is well coated and sticky. Spread your granola out on your pan and bake in the oven for 10-15 minutes.

    Once the timer goes off, using a spatula, flip your granola gently pushing it together to for some clusters, let the other side of your granola bake for another 10 minutes or so , till the granola is golden.

    Let cool before eating, and then pair 1/4 cup of the granola or so with yoghurt and fruit. keep remaining granola in a sealed jar.
